Roasted Sweet Potatoes with Spicy Mayo Ingredients
- Sweet potatoes – Sweet potatoes are a high potassium, starchy vegetable. If you’ve taken our course, you know when you might actually need to limit your potassium intake (and that most people Chronic Kidney Disease who are not on dialysis do not need to limit their potassium intake). Sweet potatoes are packed full of antioxidants, phytonutrients, and fiber making them a great addition to your day.
- Olive oil – the olive oil in this recipe serves several purposes. If you’ve ever tried to roast sweet potatoes plain before, you know that they can seem to take forever to actually cook and they stick all over the pan you’re using. Adding olive oil makes the cooking process go by faster and also prevents them from sticking to the pan. Not to mention, olive oil adds some healthy monounsaturated fats to the meal.
- Low Sodium Spicy Mayo – While I think that sweet potatoes are delicious on their own, our spicy mayo dip will add some great flavor as well as calories to the meal. When eating more plant based foods and limiting protein intake, it is very important to also add in more fats to ensure that you are meeting your energy needs and make your meals feel more satisfying. Traditional mayonnaise is high in fat (and they even make some plant based versions too) and low in minerals like potassium and phosphorus.
