Yogurt parfaits are an easy, no-cooking required way to get in some healthy fruits and probiotics. Assembled them in the right cup, and you can also take this breakfast on the go!

Some notes about the ingredients in this parfait:
- Yogurt – be sure to choose a kidney friendly yogurt. We chose the Bourbon Vanilla flavor of coconut yogurt from Culina. If you don’t like coconut, don’t worry. You really don’t taste the coconut flavor. This yogurt provides healthy probiotics with help improve your gut health and are associated with many beneficial effects for people with CKD.
- Blueberries – blueberries are a healthy source of fiber as well as antioxidants. If you’ve taken our course, you know how important it is to include more fruits like blueberries into your diet. They also add some nice color to the parfait!
- Banana – bananas are an excellent source of potassium. If you think that bananas have too much potassium, I encourage you to sign up for our course to see how fruits and vegetables like bananas are probably not causing high potassium levels and why you probably don’t need to be watching your potassium.
- Whipped Cream – whipped cream is a fun, yummy way to add some extra fats to a meal. I personally don’t have the time or energy to make my whipped cream from scratch, so I’ve opted for a container of whipped cream. I used the zero sugar whipped cream because I felt that the bananas and blueberries were already providing enough sugar. This one is sweetened with sucralose, so don’t eat too much if you’re sensitive to sugar alcohols. Also, if you choose another brand, be sure to check the ingredients to be sure that you are buying one without added phosphates.
